Stuffed Grapes with Goat Cheese, Pork Rinds and Chives
Yields – 20 pieces
20 red grapes
¼ cup goat cheese
¼ cup cream cheese
2 tablespoons finally chopped parsley or cilantro
1 /8 cup pork rinds broken up into small pieces
Pepper and garlic powder to taste
Cut a small slice of the bottom part of the grape, so that its stands.
Cut a small slice of the top. With the back part of a fork or small spoon scoop out most of the “meat” of the grape; being very careful to not cut the skin.
In a mixing bowl, combine goat and cream cheeses. Add parsley or cilantro and season with salt and pepper. Using a small spoon (or a piping bag if you are making a lot of them) fill grapes with cheeses mixture. Top with a small piece of pork rind and place chives to garnish.
Note: keep in mind that these grapes are supposed to be one bite. When choosing pork rind pieces be kind not to choose the largest one.
