This is the basic condiment for in many of Caribbean / Puerto Rican dishes. There isn’t a translation to the word. It can be made ahead of time and keep in the refrigerator.  Its makes for a very nice and greatly appreciated gift to make at home for when attending a dinner party.

Yields: about 1 cup

4 tablespoons olive oil
2 cups green sweet peppers with seeds removed*
1 onion cut into pieces
4-5 garlic cloves pealed
1 tablespoon tomato paste
1 teaspoon dried oregano
1 cup recao **
1 cup cilantro
Salt & pepper to taste

In blender a combine all ingredients. Keep in a jar in the refrigerator until needed

* These are found in many supermarkets in USA but if you don't have them, simply use green bell peppers. These are not chiles used in Mexican cuisine
**Recao is a ciliantro type herb that is found all over Puerto Rico. It has a very similar taste to cilantro only a bit more peppery. If you cant find it in your area, simply double the amount of cilantro
