Mango Vinaigrette


A very unique, yet simple vinaigrette/salad dressing. Refreshing and guaranteed to take you right to the tropics. If you can’t find fresh mango, it can be made using frozen mango pulp found in many Latin American markets.

Yields :1 1/2 cups

1 mango pealed and cubed
1 tablespoon mashed garlic
1/4 cup cilantro
1 teaspoon balsamic vinegar
Olive oil
Water as needed
Salt and pepper to taste

In a blender combine the mango, garlic cilantro and balsamic vinegar. Start blender and add thee olive oil. Process for about a minute until the mango has a sauce like consistency . Add water until you reach your desire consistency. Season with Salt and pepper to taste. keep in the refrigerator until cold.
